The sunflower honey has characteristic taste, similar like the sunflower seeds.
Its colour can change from golden yellow to orange depends on the quantity of the flavonoids. The combination and quantity of the flavouring substance decides the taste of the honey.
The sunflower honey contains 17-19% of water, it crystallizes quickly. After few months storage it divorces into 2 parts: liquid at the top and crystallized on the bottom. In the market you can see creamy sunflower honey as well: the hard crystallized part is crushed very small pieces on the bottom of the bottle, then it's mixed with the soft part.
The beet sugar content of the honey shows us its natural origin. A well produced honey doesn't exceed more than 5-7% of beet sugar. The sunflower honey is acidic - the pH can change between 4,5 - 3,6.
